My husband has chronic problems with gluten intolerance. I would like to note that he has NOT, nor has he been diagnosed with celiac disease. When he takes gluten, he has tiredness, joint pain and many other problems, of which the rest of his family unfortunately suffers. During the visit there one day, Sandi told me that most people with gluten intolerance can eat their freshly ground products with little to no problem. I started small, bought only a few products and my husband eat them and he said he did not notice any problems (usually he can in a day, or even a few hours). The next time I was down there, I bought a lot of products... bread, sticky rolls, cookies and a donut. And I encouraged him to eat a lot of them at once, just to see if it fails its sensitivity. So he had them for dessert, sandwiches, cookies with his coffee... etc. and regularly asked him if he noticed problems with them. And he didn't. I am so impressed by this and enthusiastic we have found products that he can consume. Sandi is so knowledgeable and informed and she showed me where they bought her mill and the grain they use. I want to invest in a mill and involve it in our house. My regret is that I don't live closer to her bakery! If I weren't gone for 2 1/2 hours, I'd be there every week.
